What's Cookin'

Chehalem Mountain artist, Vicki Joslyn sometimes likes to keep things simple!

 
3-Step Pineapple-Black Bean Guacamole

2 medium avocados, halved, seeded and peeled
¼ C. bottled green salsa (salsa verde... not taco sauce)
1 Tblsp. sour cream
½ C. finely chopped fresh pineapple or canned pineapple, drained
¾ C. black beans, rinsed and drained
2 fresh jalapeño chile peppers, seeded and minced
2 Tblsp. finely chopped shallot or red onion
2 Tblsp. chopped fresh cilantro
3 cloves minced garlic
1 Tblsp. fresh lime juice
¼ tsp. salt
¼ tsp. ground cumin
¼ C. shredded Monterey Jack cheese

Step 1:
In a large bowl mash avocados
Step 2:
Stir in all remaining ingredients
Step 3:
Cover and chill for at least 2 hours and serve with tortilla chips
